While I could never be a vegetarian, I have lately been trying to come up with alternatives to meat. A while ago, a good friend of mine brought me a meat substitute made of gluten, the protein in wheat. I have since learned that is called seitan.
You can find seitan at some health food stores, but this week I am experimenting with making my own. Wish me luck!
